Matcha used in the Japanese tea ceremony is a type of green tea made by stone-grinding finished tencha into a fine powder. Hot water is added to the matcha in a tea bowl and mixed with a tool called a chasen (tea whisk). In the tea ceremony, there are two types: koicha (thick tea) and usucha (thin tea). Koicha is characterized by a rich flavor and high viscosity, while usucha has a lighter taste and creates a light, frothy foam.
